Sweetcorn fritters with smashed avocado
These are perfect for a quick lunch or brunch, they also work well with frozen(defrosted peas), serve with some feta and crispy bacon.

Serves 1
Ingredients
For the fritters
100g sweetcorn, canned or frozen(defrosted)
1 spring onion finely chopped, or 5g chives
1 egg
10ml milk
25g plain flour
½ tsp bicarbonate of soda
dash tobacco or a pinch of cayenne pepper
salt and pepper
rapeseed oil for frying
For the smashed avocado
½ avocado, peeled
½ lime, juiced
5g fresh coriander, chopped
salt and pepper
Method
Mix all the ingredients for the fritters, apart from the oil, together in a bowl. Mix thoroughly to get rid of any lumps.
Set aside
Scoop out the avocado flesh with a spoon onto a chopping board, squeeze over the lime and mash it all together with a fork
Chop the coriander and mix into the avocado.
Heat 1 tbsp oil in a small frying pan and divide the sweetcorn batter into two or three rounds.
Fry for 2-3 minutes on each side on a medium to high heat until golden and crispy.
Serve with the smashed avocado whilst warm.
Serve with some dressed salad
