Rhubarb and Apple Crumble

A comforting pudding for when the weather is as awful as it is!

Serves 4


For the Filling:

1 cooking apple, peeled and chopped

400g Rhubarb, roughly chopped

2 Tbsp Soft Brown Sugar

1 Piece of Stem Ginger

Zest and juice of 1 Orange

For the Crumble topping:

100g Wholemeal flour

75g Unsalted butter

100g Demerara Sugar

50g Rolled Oats


For the filling

Pre-heat the oven to 180c.

Combine the apples, rhubarb, sugar and oranges together in a pie dish suitable for the oven.

Cover with foil and pop into the oven for 20 minutes.

For the Crumble top

Rub the butter into the flour either by hand (chopped into small pieces) or, quickly blitz on a food processor.

Add the sugar and oats and stir in.

Add the crumble to the top of filling and cook for 30 mins.
