This is a very quick easy recipe for banana bread.
It can all be done in one bowl without the need for a food mixer.
I use rapeseed oil, but you can use any oil that you have.
You can add in nuts, raisins, chocolate drops if you wish. If you add them, give a quick coat in flour then it stops them from sinking.
4 ripe bananas
200g caster sugar
80 ml rapeseed oil
1 egg beaten
1 tsp bicarbonate of soda
1 tsp ground ginger
1 tsp vanilla essence
300g plain flour
Preheat the oven to 170C/340F/Gas3
Mash the bananas in a bowl. Add the oil and mix in well with the fork, followed by the sugar
Beat in the egg with the fork, followed by the bicarbonate of soda, ginger, vanilla and salt
Sift in the flour and fold in.
Pour into a greased and lined 450g (1lb) loaf tin
Place in the preheated oven for 1 hour until risen and firm to the touch.
Leave for 5 minutes and then remove from the tin and place on a cooling rack.
