Banana Bread

This is a very quick easy recipe for banana bread.

It can all be done in one bowl without the need for a food mixer.

I use rapeseed oil, but you can use any oil that you have.

You can add in nuts, raisins, chocolate drops if you wish. If you add them, give a quick coat in flour then it stops them from sinking.


4 ripe bananas

200g caster sugar

80 ml rapeseed oil

1 egg beaten

1 tsp bicarbonate of soda

1 tsp ground ginger

1 tsp vanilla essence

pinch salt

300g plain flour


  • Preheat the oven to 170C/340F/Gas3

  • Mash the bananas in a bowl. Add the oil and mix in well with the fork, followed by the sugar

  • Beat in the egg with the fork, followed by the bicarbonate of soda, ginger, vanilla and salt

  • Sift in the flour and fold in.

  • Pour into a greased and lined 450g (1lb) loaf tin

  • Place in the preheated oven for 1 hour until risen and firm to the touch.

  • Leave for 5 minutes and then remove from the tin and place on a cooling rack.
